Key Lime Pie
Ingredients:
- 1/3 cup Lime Juice
- Zest of six Key Limes
- 14 oz sweetened Condensed Milk
- 3 ea Egg yolks (beaten)
- 1 1/2 tsp Rum
- 4-6 drop Green Food Coloring
- 1 x 9 inch Graham Cracker Crust
- 1/2 pt Whipped Cream
- 2 tblsp Confectioner Sugar
- 1 tblsp Rum

Method:
- Combine lime juice and zest.
- Add condensed milk.
- Beat in egg yolks.
- Combine rum and food coloring (if desired).
- Pour into pie shell.
- Whip cream together with 2 tblsp confectioner's sugar and 1 tblsp rum.
- Pour whipped cream evenly over pie.
- Let it chill till it sets, it will take about 4 hours.
Inviting flavor of lime juice, and rum in this gratifying pie
